The other day, I baked sourdough walnut brownies for the neighbours in my block. I remember coming home feeling over the moon that many left little notes of thanks and it spurred me on to want to do it again. Then, I decided that if I baked for them too often, they may take it for granted. Upon Florian’s suggestion, I did bake again, but I left the goodies in the lift of our neighbouring block so that neighbours over there could have some sweet treats too. We have three blocks here in our condo so only one block left.
Rather than make the brownies again, I baked up some banana bread with cinnamon. I have a usual go-to recipe that I often make with my eyes closed, but this time, I decided to go for a butter-based banana bread. It turned out quite a treat with a very crunchy top and insides that were soft and aromatic from the butter. I pureed three bananas to a liquidy pulp and the forth I smashed roughly so that there were bits of banana flesh speckled within.
Next time, there’ll definitely be walnuts or pecans or chocolate chips, or all the above!
Cinnamon Banana Bread (Makes 1 9×5″ Loaf – slightly adapted from Food.com)
115g butter, room temperature
4 bananas – 3 mashed to pulp and 1 lightly mashed
350g plain flour
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
- Preheat oven to 180deg C.
- Cream butter with sugar.
- Add eggs one at a time.
- Add in bananas.
- Add in dry ingredients and mix until just incorporated.
- Bake for 55-65 min.
- Allow to cool before removing from tin.
They say that it is a blessing to feed others. It feels more a blessing to myself than a blessing to others to be honest. Florian asked me the first time when I shared the brownies, why I did not put my name on the note so that our neighbours would know who baked the treats. I told him it isn’t important. What means more to me is knowing that others are enjoying the fruit of my labour. Recognition is not needed. Sharing is so much more fulfilling than baking for money; the joy in giving is infinitely greater as well.
