Matcha is love! I haven’t met a single person who doesn’t love matcha. YET. So as long as I’ve not met this one matcha-unloving person, then I shall choose to believe that that person does not exist!
So I had matcha powder, earl grey tea, and cherries at hand and in my awesome little brain, decided that the power of these three ingredients together would create a mind-blowing mouthful of awesomeness. Pleased as pie with myself for even coming up with this combination, I happily set about my kitchen getting my ingredients together.
Bitter, earthy Matcha with the scent of floral Earl Grey and the sweet bursts of Cherries? I say AYE! And let me tell you, considering the complexity of flavours in these cute little cakelets, it was an absolute breeze to make them. Just one hand, a mixing bowl and a spatula and you’re good to go! Earl Grey Matcha Cherry Cakelets (Yields 6 3″x2″ cakelets)
160g Plain Flour
15g Matcha Powder
2 Sachets Earl Grey Tea
2 tsp Baking Powder
1/4 tsp Salt
180g Plain Yoghurt
115g Butter, Melted
12 Cherries, Pitted
- Preheat oven to 170deg C and line pan.
- In a mixing bowl, whisk dry ingredients together then make a well in the middle.
- Pour wet ingredients into the well and whisk everything together until just incorporated.
- Pour batter into prepared tins and top each cakelet with 2 cherries.
- Bake for 24 min or until skewer inserted comes out clean.
- Allow to cool before removing from tin.
These are the perfect treat to make on a weekend afternoon when you want to bake something fresh but don’t want to spend too much time with prep work or washing up. These cakelets speak of sunshine and happy things to me for some reason. Perhaps it’s the soothing flavour of matcha or the subtle scent of earl grey or the taste of summer in the cherries. Or perhaps it’s everything combined because the power of three is real in these morsels of scrump-didly-umptiousness!
